A former student of the department, Lauren completed her Bachelor of Science in Human Nutrition (Hons) at Saint Francis Xavier University. After graduating she attended the Dalhousie Agricultural Campus and completed a Certificate in Food Bioscience, then work with Dr. Jen Jamieson and Dr. Marcia English as a research assistant studying gluten-free flours. She continued her education by completing the Master of Science in Biology program at Saint Francis Xavier University with a focus on plant-based proteins. After spending time working in the food product development industry, Lauren started her position as a lab instructor in the Human Nutrition Department in 2022. During the summer she works with X-Oceans Outreach as an Outreach Coordinator. Lauren is passionate about food science and education, food product development, and outreach opportunities.
